Nose to Tail Sipping? Casa Dragones was introduced in Mexico City to Chef Fergus Henderson and guests at Monica’s Patino’s Naos restaurant and was also served at a casual dinner hosted by Ana Cristina Cerrillo chef and owner of Oscar Wilde restaurant in Polanco. Chef Henderson, of London’s St. John, an S.Pellegrino Top 50 restaurant, is known for his “Nose To Tail Eating” menus, preparing unusual cuts of meat, like the Warm and Damp Pig’s Head Salad.
