Don’t Be Afraid of Terroir

Terroir might sound scary, but relax. The term refers to the land, and elements like climate and soil that affect the growth of plants. The land in which blue agave plants are cultivated affects the taste of tequila, just like wine. (Think of the poetic list of essences on any wine list.) Blue agave plants typically grow for eight to ten years before they’re ripe enough for distillation—which allows them plenty of time to feel the imprint of Mother Nature. Agaves that are grown in the lowlands, where Casa Dragones harvests, make for citrusy, peppered tequila. Think about terroir next time you take in the essences of your favorite foods and spirits; their origins are a soothing lesson in history and agriculture.
