Cilantro Margarita by Enrique Olvera and Dave Arnold
Renowned Mexican Chef, Enrique Olvera of Mexico City’s Pujol, San Miguel de Allende’s Moxi, “jammed” with Dave Arnold, founder and president of the Museum of Food and Drink, and owner/mixologist of New York’s Booker and Dax, aboard the Freedom Yacht, to create an innovative twist on a traditional Margarita.
1.5 oz. Tequila Casa Dragones Blanco
3/4 oz. Cointreau
3/4 oz. Lime Juice
1/2 oz. Simple Syrup
Handful of cilantro
Nitro muddle a hand-full of cilantro. Add Casa Dragones Blanco, Cointreau, lime juice and simple syrup. Shake and strain through a tea strainer. If you don’t have liquid nitrogen you can blend the ingredients briefly, then strain through a tea strainer, and shake.
