Roasted Artichoke Hearts
Top Chef Mexico contestant Matteo Salas of San Miguel’s Aperi, Travel + Leisure Mexico’s Gourmet Awards 2015 winner of “Best New Restaurant” and “Best Hotel Restaurant,” played off Tequila Casa Dragones Joven’s citrus, floral and spice notes in his roasted artichoke heart salad. Using locally sourced ingredients, Salas mixed fennel, radish, and xoconostle (a sour prickly pear cactus), with risotto and artichoke. The salad’s “dressing” was a gazpacho of fennel, cucumber, xoconostle and jicama. Aperi, Latin for “open,” perfectly describes the restaurant’s vision and concept, featuring a unique culinary experience; food for the senses, prepared with the region’s freshest ingredients and the passion that characterizes Chef Matteo Salas.
