1. First, swirl gently to examine the rivulets that form in the glass. Pronounced legs indicate good body.
2. Visually divide the opening of the glass into horizontal thirds.
3. Sniff the bottom third, to isolate the agave’s distinctive aroma.
4. Sniff the back of your hand – really – to return your nose to a neutral state
5. Sniff the middle third to detect the fruit layers
6. Back to the hand.
7. Sniff the top third to pick up the spice notes.
8. To taste, take a small sip, which prepares your mouth. With subsequent sips, savor texture and flavors. As with fine wine, notice the finish.
