Celebrate Mexico’s Independence

Many people are familiar with the story of Hidalgo and Mexican Independence Day of 1810. But little is known of the men who helped spark that movement in the late 1700’s. At that time, San Miguel de Allende was situated at the crossroads of the lucrative silver trade in Mexico. The Dragones of San Miguel, an elite cavalry of the Queen’s army who had been in Mexico for four generations, garnered much influence and power in business and trade throughout the region. The Dragones eventually formed alliances with influential leaders in the church, including Hildalgo, to seek independence from Spain. General Ignacio Allende, head of the cavalry and leader of the Dragones, worked closely with Hidalgo to spark the movement of Mexican Independence. On September 15th, 1810, Hidalgo notoriously rang the bell and exclaimed El Grito! marking the beginning of Mexico’s Independence Movement.

Today, 205 years later, Tequila Casa Dragones is inspired by this remarkable history. This year, celebrate your spirit of independence on September 15th by serving Casa Dragones Joven at your dinner party or as an elegant toast. Viva Mexico!

Mexico Meets New York City

This month, New York City’s Please Don’t Tell (PDT), widely known as one of the best cocktail bars in the United States, welcomed one of Mexico’s premier mixologists, Oscar Valle, for an unprecedented collaboration of creativity with Tequila Casa Dragones Blanco.

In recognition of his contribution to Mexican mixology, Oscar Valle, lead bartender at Mexico City’s Limantour Roma, was invited to join PDT’s Jeff Bell, one of four finalists for American Bartender of the Year, to craft signature cocktails inspired by Mexican motifs, exclusively with Casa Dragones Blanco.

The results were truly astonishing. Bringing the spirit of Mexico to PDT, the bar recognized in 2011 by Drinks International as the World’s Best Cocktail Bar, Valle and Bell developed three signature Casa Dragones Blanco cocktails: the Cupaima, with ancho reyes liquor and nopal bitters, Green Soup with parsley, sherry and lime juice, and Cielo Rojo with hibiscus, mole bitters and grasshoppers!

With one location in Roma Norte and another in Polanco, Limantour celebrates five years as one of Mexico City’s leading cocktail bars, having gained international acclaim when it earned the 47th spot on “The World’s 50 Best Bars Awards” ‘list in 2014. Please Don’t Tell (PDT) maintains its presence as one of the world’s most famous bars by keeping its location a secret.

The Jamming Sessions: Miami

Last week, Casa Dragones Blanco held its first Miami Jamming Session at The Rum Line at Loews Miami Beach, hosted by The Rum Line’s master mixologist Rob Ferrara, who greeted guests with his delicious “Mi Casa es Su Casa” cocktail. Previous Jamming Sessions were in San Miguel de Allende and New York.

Casa Dragones Jamming Sessions invite industry experts to jam together, spontaneously creating one-of-a-kind, signature cocktails using fresh local ingredients. The competition began with Gui from The Broken Shaker, who created the “A Rose By Any Other Name” cocktail inspired by the tasting notes of Casa Dragones Blanco. Next up was Anna from Coyo Taco who crafted the ”Anna Bananna Paleta Rita,” a fun and playful fusion of Casa Dragones Blanco and a lemon popsicle. The second group included Bryan of Bodega who made the“Pico y Picante” and Richard of Prime Fish who made the “Dragon Slayer,” inspired by the hot and humid Miami weather. The last contestant was Isaac of Repour with the winning cocktail,“I’m in Love with A Mojo,” a refreshing mixture of mojito jam and coconut syrup.

The judging panel included Fred Gonzalez of The Miami Herald, Laine Doss of Miami New Times and Gio Gutierrez of ChatChow TV.

Aspen After Hours

For the fifth year in a row, Casa Dragones hosted what has become one of the most highly anticipated parties of the Aspen Food & Wine Classic. Top chefs, media and industry insiders such as Michelle Bernstein, Gail Simmons, Eric Ripert, George Mendes, Michael White and Drew Nieporent gathered around a striking display of Casa Dragones Joven Sipping Tequila paired with an extraordinary selection of oysters by Caribou Club. The bright, crisp, citrus notes of Casa Dragones Joven paired beautifully with the creamy, briny flavors of the oysters, allowing guests to share in a moment of pure indulgence.

Adding to the excitement, celebrity chef Scott Conant and award-winning mixologist Jim Meehan of PDT collaborated during a jamming session, in which they joined together to create an original Casa Dragones Blanco cocktail inspired by summers on the Italian coast. A variety of specialty ingredients were provided for Conant and Meehan to spontaneously craft a cocktail featuring Casa Dragones Blanco along with aperitif, basil leaf and rosé, which they named “Miranda.”

In between taking photo booth snaps and dancing to DJ Rawdon’s music selections, guests tasted flavorful bites from the Caribou Club such as bison sliders, spicy tuna & crispy rice, lobster rolls and truffle fries.

The Importance of Ice – Part 1

The Importance of Ice – Part 1

By Jim Meehan, mixologist, James Beard Award Winner

Quite simply, a cocktail is composed of four elements: liquid, glass, ice and oftentimes a garnish. Those who prefer to savor a spirit on it’s own are faced with three of the four building blocks: either liquid and glassware alone or with ice. Many would concede the liquid as the most important element, but before writing off the other elements, it’s important to concede that we evaluate our food and drink with our eyes first.

It’s basic human instinct to appraise what we eat and drink with our sense of sight, to both ensure what we’re ingesting looks safe and enticing from an aesthetic perspective. The next sense we use is smell: to verify the absence of off-odors, and prepare our next sense; taste, for what’s to come. Most poisons have a bitter flavor, which is why we taste bitterness at the back of our tongue: before we swallow something potentially dangerous.

None of us would put something hideous or harmful in our mouth, and all of us are naturally drawn to aesthetically pleasing and aromatically inviting food and drink. While food and beverage serve as fuel to keep us alive, alcohol is something we ingest for hedonistic purposes only; either formally or casually. While the enjoyment of beer and wine benefits from service in the appropriate glassware, ice is typically reserved for the appreciation of spirits and cocktails.

From a purely functional perspective, ice cools spirits and cocktails and dilutes them as it melts. Dilution can be controlled, as it is by bartenders who shake or stir a cocktail using ice that is either withheld from the final mixture when served straight up, or poured over fresh ice, which will continue to keep the mixture cool, but further dilutes it as it sits. The addition of water through dilution makes a spirit more quaffable, and brings out flavor nuances that are undetectable at full strength.

The aroma and flavor of a cocktail or spirit varies based on the temperature and strength which it’s served, which is why neat spirits are so powerful: at full strength, the warmer they are: the more volatile their aroma.  Spirits connoisseurs tend to prefer to sip their spirits neat, with a splash of water, or over ice; but the size and quality of the ice was rarely taken into consideration in the West until recently.

Stay tuned for The Importance of Ice – Part 2 as Jim Meehan talks about the history of ice in Japan.

The Importance of Ice – Part 2

By Jim Meehan, mixologist, James Beard award winner

In Japan, ice is delivered in blocks and cut by hand before service: commercial ice makers are seldom employed in bars. Each piece is transferred from a freezer to a hinoki wood bowl to allow it to temper (warm up so it doesn’t crack when it’s combined with room temperature liquids) and defrost before service. Cocktails and spirits (mainly whisky) are served over hand-carved spheres, crystal clear cubes, and even diamonds in traditional cocktail bars.

Following in the footsteps of Japanese bartenders who’ve mopped up international cocktail competitions and garnered thousands of views on YouTube, dozens of bars across the U.S. have invested in Clinebell ice machines, which ice sculptors rely on to produce large clear blocks of ice to cut down into cubes and spears for long drinks. Besides their jewel-like beauty, clear blocks of ice melt more slowly than cloudy ice so you can savor your drink before dilution claims it’s character.

In the video, you’ll see second-generation ice sculptor Shintaro Okamoto breaking down 300 pound blocks of ice into clear cubes, spears and spheres for local bars and restaurants such as PDT and Gramercy Tavern. Don Lee, who founded the bar program at Momofuku, urged Okamoto to develop a service for bars back in 2009, and clear ice has become standard in top cocktail bars in New York City ever since.

Most of us lack the time, space and resources that the countries top cocktail bars and ice studios have allocated for ice, but fret not: you can make nearly perfect ice at home. Online stores and shops dedicated to cocktails, such as Cocktail Kingdom, sell molds for cubes, spears and spheres, along with tappers, mallets, ice bags and picks to prepare pro-quality ice for drinks in your home.

Stay tuned for the last installment of James Beard award winning mixologist Jim Meehan’s The Importance of Ice.

The Importance of Ice – Part 3

By Jim Meehan, mixologist, James Beard award winner

Most of us lack the time, space and resources that the countries top cocktail bars and ice studios have allocated for ice, but fret not: you can make nearly perfect ice at home.  Online stores and shops dedicated to cocktails, such as Cocktail Kingdom, sell molds for cubes, spears and spheres, along with tappers, mallets, ice bags and picks to prepare pro-quality ice for drinks in your home.

The technique is somewhat simple: cool warm filtered water (which has less gas and particular matter trapped in it than cold water from the tap) and add it to an insulated cooler.  Place the cooler in your freezer and pull it out just before it freezes all the way: the top layer will contain impurities, which would be trapped if you froze it solid, and lead to cloudy ice.

After you’ve allowed the block to temper, extract the block and break it down by scoring it along a line you’d like your cubes sized with a knife (preferably a sturdy soba or chef’s knife), followed by tapping it with a multi pronged ice pick and a rubber mallet.  If this seems excessive, you can forgo perfectly clear ice for blocks by using custom molds: set your freezer to a higher setting, as the longer it takes to freeze the water, the more gas and impurities will be displaced.

Seemingly fussy to some, think of the time and care that goes into mixing a perfectly balanced cocktail or distilling a world-class spirit: why would you compromise its integrity when it comes to presentation?  While thin-rimmed crystal tumblers and large clear cubes are associated with whisky more than any other spirit, white spirits such as Casa Dragones Blanco Tequila benefit greatly from clear ice, as the bright liquid disappears; allowing you to focus on it’s heady taste and aromatics.

Salud!

Danh Vo Special Edition

Punta della dogana – Pinault collection 2015

Casa Dragones is thrilled to announce our collaboration with the internationally acclaimed artist Danh Vo, in two Special Edition bottles designed especially for two unique exhibitions surrounding the 2015 Venice Biennale. Both Special Edition bottles feature calligraphy directed by the artist, and executed by the artist’s father, Phung Vo, whose elegant calligraphy is prevalent in Vo’s art.

According to ArtNet News, “when Danh Vo was asked to be the first artist to curate an exhibition at Venice’s Punta della Dogana (run by the Pinault Collection, as is the Palazzo Grassi), his first thought was tequila.”

To celebrate the Special Edition and the exhibition opening, Casa Dragones Joven was poured at the sensational dinner hosted by Francois Pinault in honor of the artists and curators. The dinner began with glasses of Casa Dragones being served at the magnificent Hotel Bauer, where Mexican craftsmanship met Italian sophistication while overlooking the incomparable views of the Punta Della Dogana. Late night revelry continued as artists, collectors and newly-inaugurated European tequila lovers enjoyed their first time with Casa Dragones.

The first exhibition, Vo’s Slip of the Tongue at Palazzo Grassi – Punta Della Dogana – Pinault Collection, marks the first time an artist has been selected to curate for Punta Della Dogana in Venice. The second exhibit will be at the Venice Biennale’s Danish Pavilion, where Vo is the featured artist.

For this first Special Edition, 150 Casa Dragones Joven bottles have been hand-inscribed with the exhibition title, Slip of the Tongue, uniting each untitled piece under the umbrella of Vo’s curated collection, in collaboration with curator, Caroline Bourgeois. Special Edition bottles are available in Punta Della Dogana – Pinault Collection museum store. They are also available exclusively through Casa Dragones Concierge. For information, please contact Concierge@CasaDragones.com

The origin of our collaboration is both remarkable and fitting. Danh Vo, who was born in South Vietnam and later settled in Denmark with his family in 1979, has recently chosen to reside in Mexico City, and shares a passion for Mexico that extends to Casa Dragones. We are honored and thrilled to be part of the artistic curation of the Venice Biennale 2015.

Danh Vo Special Edition

Venice Biennale 2015

Often inspired by the landscape of his locale, Danish-Vietnamese artist Danh Vo, who currently resides in Mexico, was inspired by the tradition and spirit of Casa Dragones and our shared passion for Mexican culture and the arts.

As part of his installation of mothertongue at the Danish Pavilion at La Biennale di Venezia, 56th International Art Exhibition, Danh Vo deliberately places a bottle of Casa Dragones Joven Sipping Tequila on a 1949 Danish wooden table inlaid with 30 silver coins.

Casa Dragones hosted a party honoring the exhibition at the Danish Pavillion, where guests, artists and curators including Danh Vo, Suzanne Ghez, Marian Goodman, Mauricio Guillén and Rirkrit Tiravanija enjoyed Tequila Casa Dragones Blanco on the rocks.

“Danh Vo is one of the most important and innovative figures on the international art scene,” says the Danish Arts Foundation’s Committee for Visual Arts Project Funding, who selected the Vo to represent Denmark at this year’s Venice Biennale.

To celebrate this remarkable curation, Casa Dragones and Danh Vo have created a new Special Edition 56th Venice Biennale – Danish Pavilion collection. Each bottle is directed by the artist and hand-inscribed with calligraphy by the artist’s father, Phung, whose beautiful calligraphy is often present in his work.

Special Edition bottles are available for sale at the Danish Pavilion and participating galleries representing Vo’s work.  For more information, contact SpecialEdition@CasaDragones.com
