
Risotto with Sea Scallops
Chef Simone Mua of Casa Tua Miami pairs Casa Dragones with a second course of risotto with limone and seared sea scallops.
Of the pairing, Chef Mua says, “Sea Scallops are naturally salted by the sea, which I felt went well with the sweeter flavors in the tequila. The lemon aspect of the risotto also picks up the citrus in Casa Dragones, while the chives pair well with the herbaceous notes of the tequila too.”
