Cilantro Margarita by Enrique Olvera and Dave Arnold
Renowned Mexican Chef, Enrique Olvera of Mexico City’s Pujol and San Miguel de Allende’s Moxi, jammed with Dave Arnold, founder of the Museum of Food & Drink, and owner of New York’s Booker and Dax, aboard the Freedom Yacht to create an innovative twist on a traditional Margarita.
1.5 oz. Tequila Casa Dragones Blanco
3/4 oz. Cointreau
3/4 oz. Lime Juice
1/2 oz. Simple Syrup
Handful of cilantro
Nitro muddle a hand-full of cilantro. Add Casa Dragones Blanco, Cointreau, lime juice and simple syrup. Shake and strain through a tea strainer. If you don’t have liquid nitrogen you can blend the ingredients briefly, then strain through a tea strainer, and shake.
