Catch of the Day: Zarandeado
Chef Enrique Olvera of Mexico City’s Pujol Restaurant paired Tequila Casa Dragones Joven with his incredible Zarandeado dish. The dish features freshly caught white fish that has been marinated and then grilled to perfection, Nayarit style. Cooking the fish this way creates a crisp skin or layer around the outside of the fish while leaving the insides tender and refreshing. Chef Enrique Olvera draws much of his culinary inspiration from his origins in Mexico City which he uses as a basis from which to combine traditional Mexican cooking techniques and flavors with a contemporary flare.
