Chef Gonzalo, a native of San Miguel de Allende, (also the spiritual hometown of Casa Dragones) began his career in Texas where he gained extensive experience in fine dining and large-scale event culinary presentation at some of the finest restaurants and hotels in Dallas. Returning to his home, Chef Gonzalo combined his thorough knowledge of international cuisine with his desire to create contemporary Mexican cuisine. Quince Rooftop is one of San Miguel de Allende’s newest and most unique destination venues.
