Executive Chef Michael Rotondo of the Ritz-Carlton San Francisco’sParallel 37 restaurant, is known for crafting special dishes with hyper-seasonal ingredients found only in the San Francisco Bay area, and the Sashimi of Kampachi with Kumquats dish is no different. Kampachi is a local yellowfish, whose light, nutty flavor is enhanced by the tart sweetness of kumquats and balanced by the crisp flavor of Tequila Casa Dragones Joven.  Chef Michael Rotondo worked in multiple Michelin Star restaurants, including a stint beside Paul Bocuse in France.  From there, he moved back to the United States and began his tenure at Charlie Trotter’s, where he received the “Most Promising Chef” award from Chefs Daniel Boulud and Thomas Keller.
