Crispy Fish Tacos
Created especially for Valentine’s Day by chef Fabio Bano, this unique combination of crispy fish tacos paired specifically with the complex, smooth taste of Tequila Casa Dragones Joven is now available at New York’s Spring Place restaurant for a limited time only.
This dish features filets of red snapper that are fried and then cradled within freshly baked cornflower tortillas. The classic Mexican sauce of pico de gallo is then added atop the fish before each taco is sprinkled in espelette pepper, lime zest, freshly diced tomatoes and crème fraîche. The lime zest within the pico de gallo highlights the citrus aroma in Casa Dragones Joven while a light topping of cilantro gives the dish a crisp, herbaceous finish with a touch of acidity.
