Goat Cheese, Sweet Tomato, Arbequina
Carlos Hannon, Executive Chef at the Rosewood Hotel in San Miguel de Allende, concluded his four-course pairing dinner with a goat cheese dessert made with a sweet base of tomato and accompanied with arbequina. The tomato, the goat cheese, and the dessert’s overarching sweetness complement and bring forth the hazelnut notes found in Casa Dragones Joven. The dish makes for a rich and creamy finish that marries beautifully with the pure, clean taste of Dragones Joven.
