Chef Jill Montinola of Miami’s Shikany restaurant created a delicious dessert paired with Tequila Casa Dragones Joven, avocado mousse with crispy rice, black sesame sponge, candied kumquat, and grapefruit sorbet.
Of the pairing, Chef Montinola says, “Casa Dragones cuts the depth of this dessert perfectly. It’s also a play on savory and sweet, and the grapefruit notes in it compliments the citrus of the tequila. The crispy rice also has a hint of hazelnut, which also picks up these subtle flavors in the tequila.”
