White Ceviche
Hotel Matilda‘s annual White Dinner was held at the Jardines de Matilda as part of San Miguel de Allende’s 2nd Annual La Calaca Festival in celebration of Día de Muertos. Prepared by Chef Martha Ortiz of Mexico City’s famed Dulce Patria, the all-white menu featured a variety of elegant dishes, featuring a stunning pairing of Casa Dragones alongside a white fish ceviche with salted lime, coconut snow and Mexican yam petals.
