Grilled Halibut
Chef Simone Mua of Casa Tua Miami pairs Casa Dragones with a main course of grilled halibut with fresh oregano, a caper crust and leek puree.
Of the pairing, Chef Mua says, “The fish is exceptionally fresh with a solid texture. I added the caper crust and fresh oregano to pick up on the fresh aromas of the tequila.
