The Modern’s Chocolate Tart
When Pastry Chef Jiho Kim of New York City’s two-Michelin-star restaurant The Modern tried Tequila Casa Dragones Joven, he immediately thought of chocolate. Casa Dragones Joven possesses hints of vanilla and a distinctively warm finish, so Kim knew that the sweet and slightly bitter characteristics of chocolate would pair well with the tequila. With that in mind, he set to work on creating a unique, spherical chocolate tart of Earl Grey Ganache and vanilla Chantilly nestled beneath dollops of homemade whipped cream: the perfect Valentine’s Day dessert paired with Casa Dragones Joven. With a final sprinkle of Fleur de Sel and fresh lime zest to draw in an aspect of citrus, the dessert is then complete. While describing the finishing touch of his dish, Kim said with a smile that “chocolate and lime are good friends, and tequila and lime are good friends,” which, in his words, made them a fantastic combination for a dessert pairing.
