Branzino Carpaccio
Chef Simone Mua of Casa Tua Miami pairs Casa Dragones with an appetizer of branzino carpaccio with mache salad, grapefruit, roasted hazelnuts, and a lime dressing.
Of the pairing, Chef Mua says, “I paired this dish with Casa Dragones because of the fresh ingredients – the burst of citrus flavor in the grapefruit, the crispness of the mache both complement it nicely. Branzino is a neutrally flavored fish and very tender. The roasted hazelnuts also play into the contrast of flavors and pick up the subtle aging in the tequila.”
