Rivera by Jim Meehan
Inspired by the famed Bellini cocktail, which is named for Venetian artist Giovanni Bellini, renowned bartender Jim Meehan masterfully crafts a new signature cocktail, and names it Rivera after Mexican artist, Diego Rivera. Using local ingredients such as guava and grapefruit, Meehan achieves the rosy pink color of the Bellini while enhancing the notes of Casa Dragones Blanco, and adds champagne for a lively finish on the palate. Meehan crafted the cocktail while launching the Casa Dragones Bartender Residency Program at the Casa Dragones Tasting Room in San Miguel de Allende.
Cocktail Recipe
2 oz. Tequila Casa Dragones Blanco
2 oz. Champagne
4 .25” Slices of guava
.25 oz. Grapefruit Juice
.25 oz. Honey Syrup (1 part local flower honey / 1 part water)
1/8 tsp. Ground ancho chili
Place guayaba, chilli, aperol, grapefruit juice, flower honey, Tequila Casa Dragones Blanco and macerate in a glass. Finely strain mixture. Add 2 ounces of Champagne to the mix. Add ice and stir. Strain once again and pour to serve.
