As the global cocktail community gathers in New York for Bar Convent Brooklyn, we’re proud to bring together four of Mexico’s most celebrated bars. Hailing from San Miguel de Allende, Oaxaca, Mexico City, and the Riviera Maya, BEKEB, SELVA, RAYO, and ZAPOTE unite with a shared purpose: to showcase the creativity, skill, and spirit driving the Mexican mixology movement.
Each bar holds a distinct place in the story of Mexican mixology—and has been recognized among North America’s 50 Best Bars. Mexico City’s RAYO, now ranked No. 5, has quickly become a standard-bearer for inventive, boundary-pushing cocktails, leaping from No. 17 in 2023, with Audrey Claude representing the bar’s bold and refined vision. The Riviera Maya’s ZAPOTE climbed to No. 11 in 2024, brought to life by the creative energy of Salvador Guzmán. In San Miguel de Allende, BEKEB continues to turn heads with its thoughtful, terroir-driven approach—earning the No. 49 spot in 2025—thanks to the distinct perspective and leadership of Fabiola Padilla. And SELVA, with its elegant, herb-forward cocktails, now holds the No. 29 position in 2025, up from No. 34 the year before, represented by the talented duo Alexandra Purcaru and Martina Marre.
Together, these leading Mexican mixologists bring the flavors of their home regions to life—each with a unique voice, rooted in place and expressed through unexpected ingredients, bold techniques, and deep cultural connection. During Bar Convent Brooklyn, they take over The Bedford Stone Street and Zero Bond, crafting limited-edition menus that highlight their artistry alongside our family of unique sipping tequilas.
SELVA—offered their Old Wise, made with Casa Dragones Añejo Barrel Blend, Cynar, Punt e Mes, vanilla bitters, and Santa Bianca black pepper. Their Mexican Haru cocktail, by contrast, is bright and delicate, blending Casa Dragones Reposado Mizunara with manzanilla sherry, sake, guava liqueur, and bergamot.
ZAPOTE, from Riviera Maya, presented Milpa—crafted with Casa Dragones Blanco mixed with Pox Alma Huixteca, house apricot liqueur, sour orange, and huitlacoche. Their Lucía cocktail crafted with Casa Dragones Blanco, palo cortado, fig, sour soup leaves, and licorice, evokes complexity and warmth.
BEKEB captured the essence of San Miguel de Allende in Pacífico, a savory, mineral blend of Casa Dragones Blanco, tomato shrub, and ancho chile cordial. RAYO created bold balance in Dulce Amargura, using Casa Dragones Añejo Barrel Blend with tamarind cordial and smoked chile for a smoky, bittersweet finish.

It’s about championing the craftsmanship and talent that Mexico brings to the global stage, and having the opportunity to bring them together to create, share, and collaborate in New York is nothing short of extraordinary.
