Aboard the Napa Valley Wine Train with Chef Thomas Keller
In celebration of National Tequila Day on July 24, Casa Dragones teamed with world-renowned, Michelin-starred chef Thomas Keller to host an intimate dinner aboard the Napa Valley Wine Train. The breezy evening kicked off with a cocktail hour in the open-air car where guests sipped Casa Dragones Blanco hibiscus margaritas and enjoyed guacamole, salsas, and pulled pork quesillo fundido to whet appetites before all were seated in the impeccably restored dining car. The four-course menu was conceived by Kaelin Ulrich Trilling, who will be the chef de cuisine of Thomas Keller’s forthcoming Mexican restaurant in Yountville, Ca. An Oaxaca native, Trilling brings his fondness for fresh, local ingredients and bright Mexican flavors to fine dining.
Dinner that evening began with a toast from Casa Dragones cofounder and CEO Bertha González Nieves and Keller as guests enjoyed a yellowtail ceviche verde alongside Casa Dragones Blanco on the rocks. Following a savory watermelon salad with jicama, cucumber, and chile de arbol, Trilling served two types of tacos for the main course: a gulf shrimp taco with garlic, chipotle, purslane, avocado, and charred jalepeño salsa, and one of slow cooked short rib with squash blossom and salsa pasilla. Ending on a sweet note, guests enjoyed a light tres leches cake with Silverado Trail strawberries, its vanilla and citrus notes pairing perfectly with Casa Dragones Joven.
As the evening concluded with the sun setting over the vineyards (and a few more servings of Casa Dragones Joven), we couldn’t imagine a better way to celebrate National Tequila Day. Salud!
